JOB PURPOSE
In Charge of the day-to-day operation in his respective outlets.
AREAS OF RESPONSIBILITIES
- Is in charge of the outlet, in the absence of Sous Chef
- Ensures that all food is prepared and served according to the standard set by Executive Chef
- Does and checks cooking and presentation of food.
- Makes sure standard recipes are used, and food is presented according to pictures.
- Makes sure that all machines, equipment and utensils are clean and in working condition at all time.
- Checks all areas assigned to him in regards to sanitation and hygiene to prevent contamination of any kind.
- Makes sure the kitchen is always in a safe condition to prevent accidents.
- Is responsible in making the through flow information work from him all the way to the comic’s level.
- Maintains good relation with all departments to avoid frictions of any kind.
- Maximizes his and the team members’ productivity moral and consistently maintain discipline following school guidelines and local legislation.
- Motivates all staff through professionalism, organizational skills and team spirit to perform their duties.
- Ensures all staff is in proper uniform, grooming and proper discipline of all employee under his supervision.
- Reports all accidents, health and safety hazards to the Executive Chef.
- Maintain all school records and forms as prescribed by the school management and policies.
- Writes out maintenance requests if necessary, and check on completion.
- Assists Executive Chef in controlling/planning of duty roster, staff leave and attendance record.
- Assists Executive Chef in controlling of food requisition, order and inter-kitchen transfer.
- To perform any other duties as directed by the school management.
JOB SPECIFICATIONS
MINIMUM ACADEMIC/PROFESSIONAL QUALIFICATION
- Nationality: Vietnamese
- Completed kitchen apprentice or chefs training courses for at least one year
- Health and Safety Certificate
RELATED EXPERIENCE
- At least 3-year experience working in an International five-star hotel in similar position or Demi Chef
